Traditionally, Polish salads are dressed shredded vegetables, often served as a colorful trio. One will be shredded beetroot. One will be a shredded carrot salad. Usually, there will be a cabbage salad, a lighter salad than coleslaw. On a recent trip to Poland, the white salad in my trio was made with cerleric rather than cabbage. I had to recreate it when I returned home. Today’s veggie – Polish Celeriac Salad (sałatka z selara).
Celeriac is not the same plant as the stalks of celery we know more commonly here in the States. They’re of the same family and have a similar flavor, but their texture is very different. Celeriac is more like a turnip, dense and smooth without the strings that run through a rib of celery.
I’ve written this recipe for a celeriac of 6 – 7 inches in diameter. If yours is smaller, you may want to reduce the dressing proportionally.

Polish Celeriac Salad (sałatka z selara)

Ingredients
- 1 large celeriac, 6 – 7 inches in diameter
- 2 Granny Smith apples
- 2 tablespoons lemon or orange juice
- 1/2 cup mayonnaise
- 2/3 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried dill
Instructions
- Peel the celeriac, shred or grate. Place in a bowl and toss with lemon juice
- Peel and shred or grate the apples. Add to the salad.
- Whisk together mayonnaise and heavy cream. Pour over the salad and season with salt, pepper, and dill. Stir until well combined
- Refrigerate for at least one hour before serving.
- Keeps in the fridge for a 2 -3 days.
Notes
You may substitute plain yogurt for cream in the salad dressing.
