Polish Celeriac Salad (sałatka z selara)

Ingredients

  • 1 large celeriac, 6 – 7 inches in diameter
  • 2 Granny Smith apples
  • 2 tablespoons lemon or orange juice
  • 1/2 cup mayonnaise
  • 2/3 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried dill

Instructions

  1. Peel the celeriac, shred or grate. Place in a bowl and toss with lemon juice
  2. Peel and shred or grate the apples. Add to the salad.
  3. Whisk together mayonnaise and heavy cream. Pour over the salad and season with salt, pepper, and dill. Stir until well combined
  4. Refrigerate for at least one hour before serving.
  5. Keeps in the fridge for a 2 -3 days.

Notes

You may substitute plain yogurt for cream in the salad dressing.
