- 1 large celeriac, 6 – 7 inches in diameter
- 2 Granny Smith apples
- 2 tablespoons lemon or orange juice
- 1/2 cup mayonnaise
- 2/3 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried dill
Instructions
- Peel the celeriac, shred or grate. Place in a bowl and toss with lemon juice
- Peel and shred or grate the apples. Add to the salad.
- Whisk together mayonnaise and heavy cream. Pour over the salad and season with salt, pepper, and dill. Stir until well combined
- Refrigerate for at least one hour before serving.
- Keeps in the fridge for a 2 -3 days.
Notes
You may substitute plain yogurt for cream in the salad dressing.
