Cooking my way through From a Polish Country House Kitchen

This week, we tried four recipes in From a Polish Country House Kitchen.  A quick and easy cucumber salad to go with our 4th of July meal and plum jam early in the week.  Plums aren’t in season yet, I just wanted to try it, so I made enough for one jar.  Ed picked out a few recipes, two of them became our Sunday dinner.

Two of our four dishes include fresh dill – a taste that will always remind me of Poland.  This was very refreshing, and the cool crunch went well with the jalapenos on our Sonoran hotdogs.
The only jam I’ve made before was jalapeno.  I went with the lesser amount of sugar suggested, and I love that the fruit flavor still shines, sweet and tart in this very thick jam.  The thought of home canning has always intimidated me, but the instructions are easy to follow and worked perfectly.  I know, hardly necessary with just one jar, but I wanted to try it out.
Ed’s picks for Sunday dinner – excellent choices
I’ve had Wiener Schnitzel a couple of times in Austria as well as in Germany.  Why has it never occurred to me to make it at home?  It was a big hit; I know we’ll make this again.
You always learn something new.  A la Polonaise means “in the manner of Poland” or “Polish Style,” and it signifies a dish garnished with bread crumbs and butter on French menus.  A delicious side dish!
