Tonight we tried our first two recipes in my new cook-along. I’m working my way through From a Polish Country House Kitchen – 2 recipes down, 88 to go. Tonight we had Pork Loin Stuffed with Prunes with Beet, Apple, and Horseradish Salad.
We had a package of pork chops rather than a pork loin roast, so our first attempt was a little different than the original recipe, but I can tell you that the flavors go together so very well. Americans should follow the European example and cook meat with fruit more often, but first, we’ll have to grow up and forget all of the prune jokes. The longest conversation I’ve had on facebook was when our niece and my brother harassed me for filling macarons with a prune ganache. Back to the recipe at hand, after removing the meat, I used our immersion blender on the cooking broth and plums left behind to get a thicker sauce; Ed really liked the sauce – great flavor.
I always like to show you a photo of the finished dish, but this time, you’re getting the dish in progress. I have come to love beets while living in Poland. I can’t believe that I’d only had them once before moving here. The only problem is the color; they turn everything they touch a bright fuschia; there isn’t much definition to lend its self to photography. If you remember to start roasting your beets ahead of time, this is quick and easy to put together – a dish that I’ll repeat often.

Looks delicious! I have a country house and it has a kitchen but I’m not much of a cook. I do make pork with prunes however. Our butcher skewers a hole in the center of the roast for the prunes. It makes a beautiful presentation on the table. Good luck with making your way through the book. Smacznego!
