Wilted Spinach Salad

Salad #2 of 7

Adapted from The New Pillsbury Family Cookbook 
 
It does lose a bit of volume with the hot dressing, but it’s ever so tasty!

 

Ingredients

5 slices bacon
1 bunch spinach, washed
2 green onions
1/2 t. salt
1/4 t. pepper
1 T. sugar
2 T. water
1/4 cup cider vinegar


Directions

Fry bacon until crisp.  Drain on paper towel, reserving 2 T. drippings.  In a large bowl, combine spinach and onions.  Combine reserved bacon drippings with remaining ingredients.  Heat just to boiling.  Pour over spinach; toss lightly.  Garnish with crumbled bacon, serve immediately.  Serves 4 – 8.

    my great-grandmother made this with dandelion greens chopped fine, then poured over cut-up boiled potatoes. if you use a lil bit more bacon it becomes a main course and not a side dish.
