One of our favorite restaurants serves a chef salad with pesto vinaigrette. The dressing makes the meal for me. I had to create it at home to give our salads the same boost of flavor. The pesto is a quick and no-prep way to add so many flavors – basil, garlic, Parmesan cheese, pine nuts. The great thing is you can whisk it up in literally a minute or two.
Ingredients
2 heaping tablespoons basil pesto
1 tablespoon mayonnaise
1 heaping tablespoon dijon mustard
3 tablespoons red wine vinegar
6 tablespoons olive oil
1/2 teaspoon sugar
Directions
- Whisk all ingredients until well blended
- Serve or refrigerate until ready to use
