Late morning is usually my first meal of the day. Depending on when supper fits into my day, I might have a small meal or snack in the afternoon. Here are things that help me hit my nutritional goals and keep my blood sugar in check. Most importantly, these are things that I enjoy.
Carrot sticks with hummus (I pack hummus and nut butter in 4-ounce canning jars to accompany my carrot sticks, celery, or apples if I’m on the go.
Celery stick with peanut butter
Edamame – I’ve only recently tried edamame, and I love it.
String Cheese – the brand Costco sells tastes better than the plastic-like ones I’ve had before.
Babybel – I get these at Costco. Their packaging is just fun.
No nitrate deli meats – I like to keep these in the fridge. I’m not eating sandwiches so much these days, but I can roll up a slice or two to nibble on or roll them around a pickle spear or piece of string cheese.
Pistachio nuts – I buy a box of individual packets at Costco. Roasted, salted, and shelled.
Fairlife – this is my favorite protein drink. I often keep them in my purse, in a desk drawer at work, and in my car.
Apple with almond butter – the flavors and textures go together so well.
Hard-boiled egg – you can make it a little fancier with what I think of as a Polish-style deviled egg. Slice the egg in half, adding a small dab of mayo on top.
Pork rinds – not everyone’s cup of tea, but I enjoy the crunch with an onion dip. Two ounces has eight grams of protein.
Veggies with ranch dressing
