From Polish Country House Kitchen #4

Cooking my way through From a Polish Country House Kitchen

As predicted, another week with only light kitchen activity.  I did do some cooking with out neighbors, and fixed the apple latkes for them.

Another variation on the Polish chopped salad – I’m a big fan of whie cabbage salad, so I was glad to try this one.  You let the cabbage, sprinkled with salt, sit for at least an hour before proceeding.  Next time, besides draining, I will rinse the salty cabbage before adding it to the salad.  Between this salt and the salt in the dressing, it was a bit much for me.
These apple pancakes and accompnaying applesauce were a breeze to prepare – a quick fruity dish to whip up for dessert or just for a snack.  Ewa pronounced the taste very Polish, just like her mother would have made.
The Polish call them pancakes; we call them crepes.  I’m glad that the instructions said to think of the first as a test run.  It helped by self esteem as I removed the delicious but unattractive mess from the pan.  With adjustments to the heat and the amount of oil (I had a super non-stick pan that did better without), the rest turned out beautifully and were a great medium for delivering last week’s rasberry jam with congnac!
