Cooking my way through From a Polish Country House Kitchen

It’s been a warm week, so not a lot of cooking, but it was the perfect time to try the cold cordial!

Weeknight Roast Chicken – again we see the Polish style with buttered bread crumbs.  I’m a fan of buttery bread crumbs; I will look at the topping on mac and cheese and other casseroles in a new light now.  I’m sorry to say this recipe didn’t really get a fair shake.  I bought the right size bird, but it was on the tough side after roasting.  The leftovers were popped into a stew pot to become a Mexican green chile the next night.
Refreshing Mint Cordial – lighter than iced tea, a beverage very well suited to our hot, muggy summer days.  I used fresh mint (at 3 times the quantity) rather than dried, since I have it growing on the balcony.
