Eastern European Huevos Rancheros

You might call them leftovers, but I’m going to call them Eastern European Huevos Rancheros.  We had potato pancakes and goulash for dinner recently, and with a couple of potato pancakes left over, they became breakfast.  All they needed was a poached egg on top!

    orangemonk3y – thanks! I love savory for breakfast. My other favorite morning leftovers – penne and salmon in cream sauce from our favorite Irish pub.
