Chocolate Cuddle Cake

I got home from work today just after 5:00. I snagged a couple of vegan Buffalo wings and went to work on this cake. Here I am five hours later with a completed cake. I don’t think we had dinner. Definitely not on Rose’s quick and easy list! This will be a short post, probably less than 300 words and therefore, terrible for SEO. The hour is late, and I want to be at my best tomorrow as I’m learning the ropes.

Several of of my fellow Alpha Bakers have commented that they wished this 3 inch high cake was a layer cake to get more of the yummy caramel whipped cream. So that’s what I did, and I think it was a good call. I baked in two 9 inch cake pans with the sides lined inside with parchment and outside with insulating strips. They were in the oven for 25-30 minutes. After cooling, I gently removed them from my regular cake pans, not the prescribed springform pan. Both layers came out without sticking or tearing.

The  lighter than air cakes were frosted with ganache and topped with a “burnt” caramel (and I stopped 5 degrees before the temperature given temperature, but I was using an old fashioned candy thermometer. ) I put the ganache in the freezer and the caramel in an ice bath to speed up their cooling times. So be sure to give yourselves plenty of time for this yummy project.

Ed loved the cake, but felt a little tricked at first. Given the appearance, he wasn’t expecting a chiffon cake. I’m taking the rest to the office tomorrow. We’ll see what my coworkers think of it.

    Hi Lois! You finally made the cake! Vegan Buffalo Wings?..is there even such a thing? I’m curious now! Your cake looks wonderful! Glad Ed likes it too! Your whipped cream looked so good..so thick and so much! Yummy!

      Hi Faithy! Thank you! The vegan Buffalo Wings were tofu, breaded, fried and seasoned with Buffalo sauce. Just one of the things we’re learning from our vegan daughter.

    It looks and sounds delicious, but 5 hours? I dunno. I think I’d have to eat 3 or 4 slices, maybe more, to decide if I wanted to make that kind of time commitment. Bet your co-workers are going to love it.

      Many of Rose’s recipes are so complex that we lose perspective. Five hours seem like no big deal.

    Oh good you posted the baking times for the regular cake pans! I want to try that next time; making it in two layers. I used Faithy’s ganach microwave tip and it worked perfectly. So easy and quick. I skipped the gelatin part. Definitely had to get it out of the house. I dare not add up the WW points.

    i’m making a note in my book, too, that two 9 inch pans will bake for 25-30 min. that is a great idea to get more whipped cream! i hope your coworkers enjoyed the cake and appreciated your hard work.

    Hi Lois – your cake is beautiful! I love the idea of baking it in regular cake pans so you can add a layer of whipped cream in the middle…yum. Your co-workers must have loved you 🙂

      Thank you! We’re a small staff and they have a lot more self control than I do, so it took a couple of days to finish it off. 🙂
