Mesquite Pancakes

Today is my blogoversary; the first post on Food Is My Love Language was a year ago today.  To celebrate, I offered to fix breakfast for my mother and sister rather than going out as we have on many a Sunday morning.  I was a little nervous about experimenting on them.  I wanted to try out a packet of Mesquite Pancake & Waffle Mix that I picked up from Skeleton Creek at a farmers market recently.  I was pleasantly surprised by the pancakes.  They had a light fluffy texture and a slightly sweet, almost nutty taste – definitely worth doing again!

I also have a small bag of mesquite flour that I’m eager to bake with.  And to think that for all these years, my mother has considered the masses of mesquite beans that drop in her yard to be just a nuisance!

If mesquite flour isn’t available in your area, you can order online from Casa de Fruta.  You’ll also find recipes at their website.

    i like how you put the raspberries in sticks! 🙂 Pancakes with bacons? Hmm..i’ve not tried that combo before..i’ve always had my pancakes with honey and butter. got to try this combo!

    You are the second post I’ve read about mesquite flour and how delicious it is in two days time! You must be at the front of a new trend. They sound delicious and your berries look classy.

    Faithy – we had butter and syrup on the pancakes too. The bacon was actually turkey bacon because my sister doesn’t eat pork.

    Vicki – I was so surprised when I tasted the flour at the market. I’ve heard of people baking with ground mesquite beans and always wondered WHY?!! But it was so good! They were out of their coarse grind, but I think it would be great in place of corn meal in a corn bread recipe. It has no gluten, so you still need some wheat flour for structure. It also has a very low glycemic index.

    I would love to have your recipe for mesquite flour pancakes and waffles but I will NOT add that app in order to print recipe. I do not know why I could not find the recipe and print from my PC without that extension. I have been using mesquite flour for several years and I love it.
