Description

Polish Sausage & Roasted Vegetables makes a delicious one-dish supper!


Ingredients

Scale
  • 2 bell peppers (I used 1 red, 1 green), sliced
  • 2 onions, sliced
  • 1 large baked russet potato, sliced
  • 1 zucchini, sliced
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1 pound Polish sausage

Instructions

  1. Preheat oven to 350
  2. Add bell peppers, onions, potato, and zucchini to a 9 x 13 baking dish, drizzle with oil, sprinkle with salt, paprika, thyme, and black pepper, gently toss to combine and coat with oil and seasonings
  3. Cut sausage into 5 pieces, lightly score the sausage in a criss-cross pattern on top and bottom, place sausage pieces on top of veggies
  4. Cover dish with foil, bake 45 minutes, remove foil and bake 25-30 more minutes
