Polish Sausage & Roasted Vegetables makes a delicious one-dish supper!
Ingredients

- 2 bell peppers (I used 1 red, 1 green), sliced
- 2 onions, sliced
- 1 large baked russet potato, sliced
- 1 zucchini, sliced
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1/4 teaspoon black pepper
- 1 pound Polish sausage
Instructions
- Preheat oven to 350
- Add bell peppers, onions, potato, and zucchini to a 9 x 13 baking dish, drizzle with oil, sprinkle with salt, paprika, thyme, and black pepper, gently toss to combine and coat with oil and seasonings
- Cut sausage into 5 pieces, lightly score the sausage in a criss-cross pattern on top and bottom, place sausage pieces on top of veggies
- Cover dish with foil, bake 45 minutes, remove foil and bake 25-30 more minutes
