As a side or a topping, this sauerkraut relish adds terrific flavor, texture, and color!


  • One 32-oz jar sauerkraut
  • Several ribs of celery
  • One-half red onion
  • One bell pepper
  • One large jalapeño
  • 1/2 cup sugar
  • 1/2 cup vinegar
  • 1/3 cup oil
  • Salt and pepper to taste


  1. Drain the sauerkraut well
  2. I also squeezed it over the colander till fairly dry
  3. Dice the celery, onion, and bell pepper
  4. Remove the seeds and membranes from the jalapeño and dice
  5. In a small saucepan over low heat, combine the sugar and vinegar and stir till dissolved
  6. Let cool
  7. Add to the vegetable mixture with the oil and salt and pepper to taste


Enjoy as a condiment or side dish
