Polish Radish Salad – light, healthy salad with a lovely crunch!
Ingredients

- 4 eggs, hard-boiled
- 2 bunches of red radishes
- 2 tablespoons sliced chives
- 1/4 cup finely diced onion or sliced green onion
- 1 pound cottage cheese (454 g), drained
- 1 heaping teaspoon mustard
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Instructions
- Peel and dice the eggs. Trim the top and bottom from the radishes, cut them in half, and cut into thin slices.Β
- Add the egg, radishes, chives, onion, cottage cheese, mustard, salt, and pepper to a bowl and stir to combine.Β
