A classic American breakfast, so much better when made from scratch!
Ingredients

- 2 eggs
- 2 cups buttermilk
- 1/4 cup oil
- 1 3/4 cups flour
- 2 tablespoons sugar or honey
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
Instructions
- Preheat griddle to 375
- Combine eggs, buttermilk, and oil
- Add flour, sugar, baking powder, baking soda, and salt
- Stir only until large lumps disappear, too much mixing will make for tough pancakes
- Pour onto a lightly greased griddle
- Cook until bubbles form and edges are cooked
- Flip pancakes and brown other side
Notes
If you find yourself without buttermilk, add 2 tablespoons of vinegar and milk to make 2 cups, let it sit for a few minutes and you’re ready to go!
