Racuchy, a healthy pancake

Description

A super healthy, 3 ingredient pancake, with no added sugar and gluten-free!


Ingredients

  • 3 eggs
  • 1 banana
  • 5 tablespoons rolled oats
  • pinch salt

Instructions

  1. Blitz all of the ingredients in a blender
  2. (Maggi’s recipe doesn’t call for salt, but I think a pinch brightens other flavors)
  3. Pour onto a hot, greased griddle or frying pan
  4. Turn when the bubbles around the edge begin to pop

Notes

I’ve written the recipe as it was given to me. I only had two large eggs when I made this and my bananas were small, so I used two. It’s forgiving; they were perfect!
